Our olive groves form the beauty of the coasts of the Mediteranian Sea
since the times of the old Roman Empire.Sunny and warm winters make the
basis for a better growing for olive trees.
The monastic order of "St.Bendikt "planted with great effort these olive
trees on very steep slopes.They had to built stone-walls to get a platform
where to plant the trees.Thousands of those platforms on their stone-walls
are typically for this landscape.
In the western part of the RIVIERA , the most pitturesk part of the
Mediteranian Sea You will find the TAGGIASCA-olive , a dark coloured
fruit, mostly on trees , more than hundreds of years old.In an old
fashioned way people get their wellkown "Native olive oil" from these
fruits.
This kind of olive is very wholesome , plentiful of vitamins and of
delicious taste , does as well in salad cooking as in high temerature
frying, and is valid for a long time.
Remember the "Pesto" it contains :garlic ,basil , goats milk cheese
and a great part of native olive oil. You serve it on fresh cooked
noodles.
The production of olive oil starts in late autumn , the harvest begins
in the early november and lasts through the january.All the work has to
be done by hand and it is still very hard.The friuts will be collected in
great nets spread under the trees and get pressured under great millstones
.
The oil You get at the first turn is called "Native olive oil"
